And…..be sure you’re following me on Facebook, Twitter, etc because I’m starting something very cool tomorrow! #BETTERin30days Pumpkin Almond Flour Scones 1 can organic pumpkin 2 1/2 cups almond flour 1/3 cup coconut flour 1 tbsp baking powder 1/3 cup xylitol (or sweetener of your choice) 2 tsp pumpkin pie spice 1 cup chopped pecans 1tsp vanilla 2 eggs, beaten 1/4 cup coconut oil, melted (or butter, melted) 2 tbsp coconut milk or almond milk Place on cookie sheet in “scone shapes” and bake at 325 for 20-25 minutes. Pumpkin Almond Butter Muffins 1/2 cup organic pumpkin 1 cup almond butter 1/2 tsp baking soda 1 tsp vanilla pinch salt 1 tbsp pumpkin pie spice 1/4 cup xylitol (or sweetener of your choice) 2 tbsp chopped pecans Fill muffin cups about 3/4 full or bake as cookies. Bake at 350 for 20 minutes. Coconut Flour Pumpkin Bread 1/2 cup coconut oil or butter, melted 6 eggs 1 tsp vanilla 2 tsp pumpkin pie spice 1/3 cup xylitol (or other sweetener, 1/2 cup can be used if you prefer it sweeter) 1 tsp sea salt 1/2 cup organic pumpkin 1/2 tsp baking soda 1/2 cup coconut flour Mix all ingredients together and put into baking dish (coat with butter or coconut oil). Bake at 350 for 30 minutes or until cooked through. Enjoy!
